Breakfast Coffee Cake Mix in a Jar for Gift Giving

A great gift idea is a mix in a jar.

I just love those mixes in mason jars with a pretty ribbon tied on top. They are great gifts to make with your kids for teachers and grandparents. But also for a new mom or a sick friend.

You have probably seen cookies and brownie mixes but what about breakfast in a jar?

We’ve got the perfect recipe for you and it makes a huge batch so you will have several gifts made at once.

Our Breakfast Coffee Cake Mix in a Jar is the best gift for all those people you don’t really know what to buy.

You will need mason jars or other airtight containers – 2 jars for each cake – one for the cake mix (1 quart size jar) and one for the topping mix (1 pint size jar).

Breakfast Coffee Cake Mix in a Jar

Ingredients

8 1/2 cups all-purpose flour
6 cups sugar
2 cups nonfat dry milk powder
1/4 cup baking powder
1 1/2 teaspoons salt

TOPPING:
3 cups packed brown sugar
2 cups chopped pecans
2 cups semisweet chocolate chips
2 tablespoons ground cinnamon

ADDITIONAL INGREDIENTS (for each cake):
1 egg, lightly beaten
1/3 cup oil
1 cup water

Directions

In a large bowl, combine the flour, sugar, milk powder, baking powder and salt.
In a second large bowl, combine the topping ingredients.

To make individual gifts:

  • Put 3 cups of flour mixture in a (approx. 24 oz) mason jar or other airtight container
  • Put 1 1/2 cups of topping mix in (approx 12 oz) second* mason jar/container.
  • Add a square of cloth (optional) and tie a ribbon around the top of each jar.mason jar recipe cards
  • Include a recipe card with the following directions:

To prepare cake: In a large bowl, combine 3 cups breakfast cake mix, 1 egg, 1/3 cup oil, and 1 cup water. Pour into a greased 9-in. square baking pan. Sprinkle with 1-1/2 cups topping mix. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

  • *NOTE: An alternate option – instead of two jars you can put the topping mix in a Ziploc bag and place on top of the dry ingredients if your jar is a bit larger.

Yield: 7 batches (21 cups cake mix and 10-1/2 cups topping mix).
Store in airtight containers in a cool dry place for up to 6 months.

Now you have 7 gifts ready for teachers, grandparents, neighbors or that friend that drops by with unexpected gifts for your family.

I want to share one of our favorite recipes with you…

Chocolate, Cherry, Banana Breakfast Smoothie

Ingredients

  • 3 small frozen bananas (peel before you freeze)
  • 2 cups frozen dark sweet cherries
  • 2 cups chocolate milk

Instructions

  1. Place all ingredients in a blender. Blend on puree (or the highest setting) until smooth, about 30 seconds. Pour into glasses and serve. 4 servings

If you don’t have chocolate milk, you can always make your own with Hershey’s syrup or whatever your favorite chocolate flavoring is.

Make a list of ingredients you’ll need for the recipes and pay attention to the staples that you can purchase in bulk and the sales, if any, on items you’ll need. This will help immensely when you head to the grocery for the ingredients.

Then, take a few minutes to make sure you have the storage containers and bags you will need for your meals.

Prep Ahead…

An evening or a day (depending on the prep times for recipes) should be all you need to prep the breakfast meals. Prepping may consist of boiling grains such as oatmeal, slicing and washing fruits, and cooking some complete breakfasts in advance so you can add fruit and other items to make it complete.

Tip #1 A good idea for an easy prep breakfast which can be grabbed at the last minute before you leave in the morning includes baked oatmeal, a great source of fiber and a good tool for lowering cholesterol.

Tip #2 Or use your blender to whip up delicious fruit smoothies using fresh fruits such as bananas, mango and blueberries. Add extra nutritional value with veggies such as cucumber and yogurt or coconut milk to make it creamy.

Tip #3 Bagels are exceptional breakfast choices. Make or add low-fat spreads to enhance the flavor and nutritional value or add an egg, spinach and turkey bacon to make it tasty and filling.
