Easter Breakfast Casserole

Easter Breakfast Casserole

Ingredients

  • 1 pound bacon
  • 1/4 cup diced onion
  • 1/4 cup diced green bell pepper
  • 3 cups shredded Cheddar cheese
  • 8 eggs
  • 2 cups milk
  • 1 (16 ounce) package frozen hash brown potatoes, thawed

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch casserole dish.
  2. Fry the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain on a paper towel-lined plate. Crumble.
  3. In a large bowl beat together eggs and milk. Mix in cheese, bacon, onion and green pepper. Stir in the thawed hash browns. Pour mixture into prepared casserole.
  4. Cover with aluminum foil and bake in preheated oven for 45 minutes. Uncover and bake for another 30 minutes until eggs have set.

How To Make Oatmeal Breakfast Treats

Ingredients

  • 2 eggs
  • 3/4 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 1/4 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 2 1/2 cups old-fashioned oats
  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup raisins
  • 1/2 cup chopped walnuts

Instructions

  1. In a mixing bowl, combine the first five ingredients; mix well. Combine oats, flours and salt; add to brown sugar mixture and mix well. Stir in raisins and walnuts.
  2. Drop by rounded tablespoonfuls onto greased baking sheets. Bake at 350 degrees F for 12-14 minutes or until set.

  • 1 cup soy milk
  • 1/2 cup rolled oats
  • 1 banana, broken into chunks
  • 14 frozen strawberries

  • 1 1/2 teaspoons white sugar

  1. In a blender, combine soy milk, oats, banana and strawberries. Add vanilla and sugar if desired. Blend until smooth. Pour into glasses and serve.

Dad’s Breakfast Bread

Ingredients

  • 2 cups milk, scalded and cooled
  • 1 cup white sugar
  • 2 tablespoons margarine, melted
  • 1 teaspoon salt
  • 2 (.25 ounce) packages active dry yeast
  • 1/2 cup warm water
  • 2 eggs, beaten
  • 7 cups all-purpose flour
  • 3 cups oil for frying

Instructions

  1. In a large bowl, stir together the scalded milk, sugar, margarine and salt. In a small bowl, stir together the yeast and warm water. Let stand 10 minutes, or until foamy.
  2. Stir the yeast mixture into the milk mixture. Blend in the eggs. Mix in the flour one cup at a time to make a soft dough. Cover bowl and let rise in a warm place until double.
  3. Heat one inch of oil in a deep heavy skillet to 370 degrees F (180 degrees C). Form large handfuls of dough into flat pancake shapes and fry them in the hot oil, turning once, until golden brown on both sides. Remove from oil to drain on paper towels.

Ham Breakfast Braid Recipe

Ingredients

  • 1/2 cup milk
  • 4 ounces cream cheese, softened
  • 8 eggs
  • salt and pepper to taste
  • 2 (8 ounce) packages refrigerated crescent roll dough
  • 4 ounces cooked ham, thinly sliced
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Beat milk and cream cheese together until smooth. Mix in eggs, and season with salt and pepper. Heat a lightly oiled skillet over medium high heat and cook egg mixture until eggs are almost set.
  3. Arrange the crescent rolls from one package into a rectangle shape on top of a lightly greased cookie sheet. Place rolls from remaining package along the edges of the two long sides of the rectangle, with the broad half of the rolls on top of the first layer of rolls, and the pointed ends extending over the sides of the pan.
  4. Arrange the ham in a layer down the center of the dough. Spoon the cooked egg mixture on top of the ham and then sprinkle the cheddar cheese on top of the eggs. Bring the corners of the rolls together over the cheese to form a 'braid' shape.
  5. Bake in preheated oven for 25 to 30 minutes, until cheese is melted and rolls are golden brown.
