Cranberry Orange Breakfast Bread

Ingredients

  • 1 1/8 cups orange juice
  • 2 tablespoons vegetable oil
  • 2 tablespoons honey
  • 3 cups bread flour
  • 1 tablespoon dry milk powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1 teaspoon salt
  • 1 (.25 ounce) package active dry yeast
  • 1 tablespoon grated orange zest
  • 1 cup sweetened dried cranberries
  • 1/3 cup chopped walnuts

Instructions

  1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start. If your machine has a Fruit setting, add the cranberries and nuts at the signal, or about 5 minutes before the kneading cycle has finished.

Frittatas are great for supper too!

I just made the best frittata and wanted to share it with you.

Frittatas are similar to omelettes but usually the cooking is finished in the oven.  A definition online says a frittata is “an unfolded omelet often containing chopped vegetables or meats.”

I had some leftovers and was not sure what to fix for supper so I decided to use the leftovers in a frittata.  I had some roasted fingerling potatoes and asparagus and a small bit of salmon fillet.

I started by dicing the potatoes and melting the butter in an oven proof skillet.  I cut the asparagus spears into bite size pieces.  I added the potatoes to the skillet and let them brown before adding the asparagus and then crumbling the salmon into the mixture.

I beat a dozen eggs and added about 2/3 cup milk with salt and pepper and 1/2 cup parmesan cheese, and then added this mixture to the potatoes mixture.  Then I popped the skillet in to the oven on 425 degrees for about 12-15 minutes.

It was just delicious, and I highly recommend you experiment with other vegetables and meats to make a tasty frittata for your next brunch or supper.

Frittata with Asparagus and Salmon

Yield: 4-6 servings

Serving Size: 1 wedge

Ingredients

  • 1 cup cooked potatoes, diced
  • 1/2 to 1 cup cooked asparagus, cut up
  • 1 small cooked salmon fillet, shredded
  • 12 eggs
  • 2/3 cup milk
  • 1/2 cup parmesan cheese
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 425 degrees.
  2. Beat eggs, milk, cheese, salt and pepper in bowl and set aside.
  3. Melt 2 tablespoons butter in an ovenproof skillet. Add potatoes to melted butter and let brown for several minutes.
  4. Add asparagus and salmon. Then add egg mixture to vegetable mixture.
  5. Place in preheated oven for 12-15 minutes and until slightly brown and eggs are set.
  6. You can experiment with other vegetables and meats.

Ingredients

  • 1 (15 ounce) can black beans, drained
  • 2 tablespoons vegetable oil
  • 8 eggs
  • 8 (10 inch) flour tortillas
  • 1 1/2 cups shredded Cheddar cheese
  • 1 (16 ounce) jar salsa

Instructions

  1. Pour the drained can of black beans into a small saucepan and cook over medium-low until heated through.
  2. While the beans are heating, heat the vegetable oil in a large skillet. In a large bowl, scramble the eggs together. Pour the eggs into the hot skillet and scramble until cooked to desired wetness.
  3. Heat the tortillas in a microwave or in the oven until soft. Lay the tortillas flat and spoon as many black beans onto each tortilla as you like. Follow with eggs, cheese and salsa. Roll the tortillas into burritos. Serve or let cool and freeze for reheating and eating another morning.

  • 1/3 cup chilled pineapple juice
  • 2 cups vanilla yogurt

Ingredients

  • 6 ounces bulk pork sausage
  • 1 1/2 cups frozen hash brown potatoes
  • 1/4 cup chopped onion
  • 6 eggs
  • 1/3 cup milk
  • 2 tablespoons minced fresh parsley
  • 1/4 teaspoon salt
  • 1/2 cup shredded Cheddar cheese

Instructions

  1. In a skillet, brown and crumble sausage until fully cooked. Remove sausage, reserving drippings.
  2. In the drippings, cook potatoes and onion until potatoes are browned, stirring occasionally.
  3. In a bowl, beat eggs, milk, parsley and salt; pour over potato mixture.
  4. Add sausage; cook and stir gently over medium heat until eggs are set. Sprinkle with cheese.
  5. Cover for 1-2 minutes or until cheese melts.
