Zesty Breakfast Burritos Recipe

Ingredients

  • 1 pound ground pork
  • 2 tablespoons vinegar
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 garlic clove, minced
  • 6 eggs
  • 1/4 cup milk
  • 1 tablespoon cooking oil
  • 6 (8 inch) flour tortillas, warmed
  • taco sauce

Instructions

  1. Combine pork, vinegar, chili powder, oregano, salt and garlic; mix well. Cover and chill overnight.
  2. In a skillet over medium heat, cook pork mixture until no longer pink. Drain; keep warm.
  3. Beat eggs and milk. In another skillet, heat oil. Cook eggs over low heat until set, stirring occasionally.
  4. Spoon about 1/4 cup pork mixture and 1/4 cup eggs down the center of each tortilla. Top with taco sauce and roll up.

Apple Sausage Breakfast Casserole

Ingredients

  • 6 Morningstar Farms Maple Flavored Veggie Sausage Patties
  • 1 small cooking apple, cored and chopped
  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon
  • 4 cups cubed, firm-textured multigrain bread
  • 1 1/2 cups shredded cheddar cheese
  • 6 eggs, beaten
  • 1/3 cup sour cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 1/2 cups fat-free milk

Instructions

  1. Chop MORNINGSTAR FARMS Maple Flavored Sausage Patties into bite-size pieces. Set aside. In small bowl toss together apple, 1 tablespoon sugar and cinnamon. Set aside.
  2. Place half of the bread in 8 x 8 x 2-inch baking dish coated with nonstick cooking spray. Top with half of the veggie patties, half of the apple mixture and half of the cheese. Repeat layers.
  3. In medium bowl whisk together eggs and sour cream. Whisk in 2 tablespoons sugar, vanilla and salt. Add milk, whisk until combined. Pour over mixture in baking dish. Cover and refrigerate for 2 to 24 hours.
  4. Bake, uncovered, at 325°F about 70 minutes or until a knife inserted in center comes out clean (170°F.). Let stand for 10 minutes before serving.

Beverly’s Get Up & Go Breakfast Cookies

Cook Time: 10 minutes

Yield: 1 1/2 dozen

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1 egg
  • 2 tablespoons frozen orange juice concentrate, thawed
  • 1 tablespoon orange zest
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup wheat and barley nugget cereal (e.g. Grape-Nuts)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In medium bowl, cream together butter and sugar until light and fluffy. Beat in the egg, orange juice concentrate, and orange zest. Combine the flour and baking powder; mix into the fluffy mixture until blended. Stir in cereal. Drop by teaspoonfuls 2 inches apart on ungreased cookie sheet.
  3. Bake 10 to 12 minutes or until edges are golden. Remove from cookie sheet for cooling.

Ingredients

  • 6 slices bread
  • 1 (8 ounce) package processed cheese slices
  • 1 1/2 cups diced cooked ham
  • 1/4 cup butter, melted
  • 4 eggs, beaten
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground dry mustard
  • 2 cups milk

Instructions

  1. Lightly grease a 9x13 inch baking pan. Line pan with slices of bread.
  2. Place slices of cheese over bread. Sprinkle diced ham over cheese. Pour melted butter over ham, cheese and bread. Beat together eggs, salt, mustard and milk; pour over bread slices.
  3. Cover pan and refrigerate overnight. Bake in preheat oven at 350 degrees F (175 degrees C) for one hour or until set. Serve warm.

Ingredients

  • 1 (6 ounce) package butterscotch chips, divided
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon salt
  • 1/2 cup chopped pecans
  • 1 (10 ounce) can refrigerated crescent roll dough
  • 7 teaspoons corn syrup

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Melt butterscotch chips and butter in the top of a double boiler or in a bowl in the microwave. Stir until smooth. Remove from heat and whisk in flour, salt and pecans. Set aside.
  3. Separate crescent roll triangles. On greased cookie sheet, arrange crescent rolls overlapping edges to form a circle. Long pointed ends of each roll should point outwards. Spread 2 rounded teaspoons of butterscotch mixture on each triangle. Roll up triangles, beginning with pointed end of roll. Slash inside half of each roll.
  4. Bake in preheated oven for 15 minutes, until golden. Remove from oven and let cool.
  5. While rolls bake, melt remaining butterscotch morsels and corn syrup; mix well. Drizzle over cooled rolls.

  • 4 eggs
  • 3 tablespoons milk
  • 1 tablespoon grated Parmesan cheese
  • Dash pepper
  • 1 bunch baby spinach, chopped
  • 4 slices ham
  • Grated Parmesan cheese

Instructions

  1. Heat oven to 350 degrees F. Whisk eggs, milk, 1 Tbsp. cheese and pepper in medium bowl until blended. Add spinach; stir to mix.
  2. Line four greased 10-ounce ramekins or custard cups with ham, pressing against bottoms and sides. Divide egg mixture among ramekins; place in baking pan.
  3. Bake in center of 350 degrees F oven until custard is just set, about 20 minutes. Remove from oven; let stand 5 minutes. Sprinkle with cheese.
