How To Make Hearty One Pan Breakfast

Ingredients

3 potatoes, peeled
6 ounces bacon, chopped
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 teaspoon chopped garlic
1 cup chopped fresh tomatoes
salt and pepper to taste
6 ounces Cheddar cheese, shredded
8 eggs

Directions

Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.

Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Add the onions, peppers, garlic, tomatoes, and potatoes. Season with salt and pepper and cook until vegetables are soft, about 5 minutes.

Sprinkle vegetable mixture with cheese. Crack eggs into the pan a couple of inches apart. Cover pan and allow eggs to cook to desired firmness. Remove pan from heat and serve.

Recipe For Feather-Light Breakfast Puffs

Ingredients

1/3 cup shortening
1 egg
1 1/2 cups all-purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup milk
TOPPING:
1/2 cup sugar
1 teaspoon ground cinnamon
6 tablespoons butter or margarine, melted

Directions

In a mixing bowl, beat shortening and egg. Combine the flour, sugar, baking powder, salt and nutmeg. Stir into egg mixture alternately with milk (batter will be stiff). Fill greased or paper-lined muffin cups about two-thirds full. Bake at 350 degrees F for 15-20 minutes or until muffins test done. For topping combine sugar and cinnamon. When puffs are removed from the oven, immediately roll each in butter and then into cinnamon-sugar. Serve hot.

  • 3/4 cup sugar
  • 1 egg
  • 1 cup all-purpose flour

  • 10 bacon strips, cooked and crumbled
  • 2 cups cornflakes
  • 1/2 cup raisins

Instructions

  1. In a mixing bowl, cream butter and sugar. Beat in egg. Add flour and baking soda; mix well.
  2. Stir in bacon, cornflakes and raisins. Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets.
  3. Bake at 350 degrees F for 15-18 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks. Store in the refrigerator.

  • 1/2 cup butter softened
  • 3/4 cup sugar
  • 1/4 cup packed brown sugar
  • 2 eggs

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup sour cream
  • 1 pound bulk pork sausage cooked and drained
  • 1 cup fresh or frozen blueberries
  • 1/2 cup chopped pecans

BLUEBERRY SAUCE:

  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/2 cup water
  • 2 cups fresh or frozen blueberries

  • In a mixing bowl, cream butter and sugars. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder and baking soda; add alternately with sour cream to creamed mixture, beating well after each addition. Fold in sausage and blueberries.
  • Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Sprinkle with pecans. Bake at 350 degrees F for 35-40 minutes or until cake tests done.
  • For sauce, combine sugar and cornstarch in a saucepan. Add water and blueberries. Cook and stir until thick and bubbly. Spoon over individual servings.

1 (16 ounce) package breakfast sausage
1 chopped green onion
2 cups shredded Cheddar cheese
6 eggs, lightly beaten
1 cup water
1/2 cup milk
1 (2.64 ounce) package country gravy mix
6 slices bread, cut into 1 inch cubes
2 tablespoons melted butter (optional)
paprika to taste (optional)

Directions

Preheat oven to 325 degrees F (165 degrees C). Grease an 11×8 inch baking dish.

Brown sausage in a large skillet; drain fat.

Combine sausage with green onion and spread evenly across the bottom of the baking dish. Top with shredded cheese. Whisk together eggs, water, milk, and gravy mix; add mixture to baking dish. Arrange bread squares evenly on top. If desired, drizzle melted butter over bread, and sprinkle with paprika.

Bake 40 minutes in the preheated oven, or until a knife inserted into the center comes out clean. Set aside 10 minutes before serving.
