Ooey Gooey Breakfast Rolls

Ingredients

1/2 cup chopped pecans (optional)
1 (1 pound) loaf frozen bread dough, thawed
1/2 cup butter, melted
1/2 cup packed brown sugar
1 (3.5 ounce) package cook and serve butterscotch pudding mix
2 teaspoons ground cinnamon

Directions

Grease a 9-inch Bundt pan, and sprinkle the pecans into the bottom of the pan.

Cut the thawed bread dough in half, and cut each half into 8 pieces. Roll the 16 dough pieces into balls, and place them into the pan on top of the nuts.

Mix the melted butter and brown sugar together in a bowl, and set aside. Sprinkle the butterscotch pudding mix over the rolls, then sprinkle on the cinnamon. Pour the butter mixture over the rolls, cover the pan loosely with plastic wrap, refrigerate, and let the rolls rise for 6 to 8 hours, or overnight.

Preheat an oven to 350 degrees F (175 degrees C).

Remove the plastic wrap from the pan, and bake the rolls for 25 to 30 minutes, until golden brown.

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar, divided
  • 1 tablespoon baking powder
  • 3 tablespoons butter or margarine
  • 2 eggs, lightly beaten

  • 1/2 cup milk
  • 1 cup raisins
  • 1/2 teaspoon ground cinnamon

Instructions

  1. In a mixing bowl, stir together flour, 1/2 cup sugar and baking powder; cut in butter.
  2. Combine eggs, vanilla and milk; add to dry ingredients and stir just until moistened. Add raisins.
  3. Drop by tablespoonfuls onto greased baking sheet. Combine the cinnamon and remaining sugar; sprinkle over buns.
  4. Bake at 325 degrees F for 20-25 minutes or until light golden brown. Serve warm.

Ingredients

  • 6 frozen bread dough rolls, thawed
  • 4 teaspoons butter or margarine, softened
  • 2 tablespoons sugar
  • 1 teaspoon orange juice
  • 1/2 teaspoon grated orange peel
  • ORANGE GLAZE
  • 1/2 cup confectioners' sugar
  • 1 tablespoon orange juice
  • 1/8 teaspoon grated orange peel

Instructions

  1. On a lightly floured surface, roll each piece of dough into an 8-in. rope. Flatten to 1-1/2-in. wide strip.
  2. Combine the butter, sugar, orange juice and peel; spread over dough. Roll up jelly-roll style, starting with a short side. Pinch ends to seal. Place in a greased 8-in. square baking dish.
  3. Cover and let stand in a warm place until doubled, about 45 minutes.
  4. Bake at 350 degrees F for 18-22 minutes or until golden brown. Combine glaze ingredients and drizzle over warm rolls.

Dad’s Orange Cardamom Breakfast Rolls Recipe

Ingredients

1 large orange
1/3 cup honey
1 tablespoon vegetable oil
2 cups bread flour
1 cup whole wheat flour
1 teaspoon salt
2 teaspoons bread machine yeast
3/4 cup packed brown sugar
3/4 cup sweetened dried cranberries
1 teaspoon ground cardamom

Directions

Zest the orange; set zest aside. Peal and seed orange; cut orange fruit into chunks. Combine zest and fruit in a blender and puree. Pour orange pulp into bread machine pan.

Add honey, oil, white flour, wheat flour, salt, and yeast to the orange pulp. Select dough setting, and start the bread machine. Adjust consistency with orange juice or flour as needed to achieve a soft pliable dough.

When dough cycle is complete divide dough into 2 or 3 pieces. Roll out to a thickness of 1/4 inch. Sprinkle with brown sugar, cardamom, and dried cranberries. Roll up dough with goodies inside, and slice 1 to 2 inches thick. Place rolls in a baking pan coated with non-stick spray. Allow enough room between the rolls so that they rise properly. Let rise in a warm spot for approximately 1 hour.

Bake in a preheated 375 degrees F (190 degrees C) oven for 20 to 25 minutes. Remove from pan, and place on wire rack. Serve warm.
