We have an eggcellent selection of egg recipes for your breakfast, brunch, or breakfast for dinner. We are celebrating National Egg Month at Family Breakfast Recipes.

We reached out to some other foodies and asked them to share their favorites. We got so many good recipes for eggs prepared so many different ways.

Scrambled Eggs

Laura from Day by Day in Our World shared her Veggie Lover Egg Scramble. With only a few ingredients, you can have a complete meal in one pan for any time of day.

Our own recipe for Easy Egg and Avocado Breakfast Burrito starts with scrambled eggs and is easy to carry out the door if you are in a rush.

Boiling eggs is essential for any cook but Annie at Dinner Planner shares how to boil eggs for different lengths of time to satisfy anyone’s preferences.

And for something really different you might like to try Coconut Curried Eggs from That Recipe. You start with boiled eggs for this Indian recipe.

Frittata

A frittata is an egg dish started on the stove and finished in the oven so you can get the table set and not have to stir the eggs until cooked through.

The Zesty Olive provided us with a recipe for Spinach, Tomato, and Feta Cheese Frittata for one person which comes in so handy at times. This frittata recipe doesn’t even start on the stove. Just pop it in the oven for an easy meal.

Quiche

You may be more familiar with a quiche and we have two to share.

Bacon Cheddar Quiche from Greta’s Day starts with a pie crust which is the traditional quiche. Greta raises her own chickens and uses her fresh eggs.

The Crowd Pleasing Hashbrown Quiche from Day by Day in Our World has a hashbrown/shredded potato base. It really fills up Laura’s boys.

 MakeAhead Egg Recipes

Egg Salad is like pimento cheese in that there are so many ways to make it. Try this Egg Salad with Olives and Celery from Zesty Olive for a new twist on an old classic.

How often is breakfast rushed? Almost always?

So for those days that you can’t cook, plan ahead and fix these Asiago and Bacon Egg Muffins from Rural Mom the night before and reheat or make them on the weekend for the week ahead.

All of these egg recipes can be adapted to suit your family’s preferences. If you don’t want meat, leave it out. If you do want meat, add more. The same for vegetables. Switch up and use different vegetables and see which are your favorites.

How To Make Breakfast Casserole

Ingredients

  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (16 ounce) container sour cream
  • 1 (2 pound) package frozen hash brown potatoes, thawed
  • 1 cup cubed, cooked chicken meat
  • 1 cup diced ham
  • 1 onion, chopped
  • 3/4 cup shredded Cheddar cheese
  • 1 cup crushed potato chips
  • 1/4 cup butter, melted

Instructions

  1. Combine undiluted soup, sour cream, hash browns, cubed chicken and ham, onions, and cheese. Pour into a lightly greased 9 x 13 inch pan.
  2. Bake at 350 degrees F (175 degrees C) for 30 minutes. Top with crumbs, and drizzle with melted butter or margarine. Bake for another 15 minutes.

Bacon and Egg Breakfast Tarts Recipe

Ingredients

  • 1 (11 ounce) package pie crust mix
  • 1 (6 ounce) package Canadian-style bacon
  • 1 cup shredded Cheddar cheese
  • 4 eggs
  • 1/4 cup milk
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Prepare pastry for a one crust pie as directed on package. Divide pastry into 4 equal parts.
  3. Roll each part into a 6 inch circle on a well floured, cloth covered board with a floured, cloth covered rolling pin.
  4. Fit pastry over backs of large muffin cups (3 x 1 1/2 inch), or 6 ounce custard cups; make pleats so pastry will fit closely. If using individual pie pans or tart pans, cut circles 1 inch larger than inverted pans, and fit into pans. Prick surface. Place tarts on an ungreased cookie sheet.
  5. Bake until light brown, about 8 to 10 minutes. Cool 5 minutes, and carefully remove from cups. Reduce oven temperature to 350 degrees F (175 degrees C).
  6. Place 2 bacon slices in the bottom of each pastry cup. Sprinkle cheese over the meat, making slight well in centers. Break 1 egg into each. Add 1 tablespoon milk into each tart. Sprinkle with nutmeg and pepper. Place tarts on an ungreased cookie sheet
  7. Bake until eggs are soft cooked, about 15 to 20 minutes.

Most Excellent Breakfast Casserole Recipe

Ingredients

  • 1 pound ground pork sausage
  • 1 pound bacon
  • 4 cups milk
  • 8 eggs
  • 12 slices white bread, crusts trimmed
  • 2 tablespoons butter, softened
  • 3 small onion, chopped
  • 6 slices processed American cheese, shredded

Instructions

  1. Place sausage and bacon in two large, deep skillets. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
  2. Butter one side of six slices of the bread. Placed slices butter side up in the bottom of a 9x13 inch baking pan.
  3. In a large bowl, stir together cooked sausage and bacon with onion and cheese. Place half of his mixture on top of buttered bread. Then add another six slices of bread (no butter). Add remaining meat/cheese mixture. Beat together milk and eggs; pour over top of casserole. Cover with foil and refrigerate overnight.
  4. The next morning: preheat oven to 425 degrees F (220 degrees C).
  5. Bake, covered, in preheated oven for 45 to 60 minutes.

How To Make Breakfast Pizza I

Ingredients

  • 1 pound ground breakfast sausage
  • 1 (8 ounce) package refrigerated crescent rolls
  • 1 cup frozen hash brown potatoes, thawed
  • 1 cup shredded Cheddar cheese
  • 5 eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 375 degrees F (190 degrees C).
  2. Brown sausage and drain. Separate crescent roll dough into 8 triangles. Place in an ungreased 12 inch pizza pan with points toward the center. Press together to form a crust. Bottom of crust should be sealed and outside edge should be slightly raised. Spoon sausage over crust. Sprinkle with hash browns and top with cheddar cheese.
  3. Beat together eggs, milk, salt and pepper; pour over crust. Sprinkle with parmesan cheese.
  4. Bake in preheated oven until eggs are set, about 25 to 30 minutes.

Tasty Breakfast Burritos

Tasty Breakfast Burritos

Ingredients

  • 2 pounds ground pork sausage
  • 12 eggs, beaten
  • 1 (4 ounce) can chopped green chile peppers, drained
  • 8 (10 inch) flour tortillas
  • 8 ounces Cheddar cheese, shredded
  • 1 teaspoon all-purpose flour
  • 1 cup milk

Instructions

  1. Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, reserving 2 tablespoons drippings; set sausage aside. Preheat oven to 350 degrees F (175 degrees C).
  2. Add the eggs and green chiles to the skillet; cook, stirring occasionally, until eggs are scrambled and set.
  3. Lightly grease a 9x13 inch baking pan. Place the tortillas on a counter top or other clean surface. Cover each tortillas with portions on sausage, cheese and eggs. Roll up the tortillas and place them seam side down in the baking dish.
  4. Heat reserved sausage drippings in the skillet. Sprinkle on the flour and stir. Add milk, stirring constantly, until the gravy begins to thicken. Pour the gravy on top of the tortilla rolls.
  5. Bake in preheated oven for 10 to 15 minutes, until gravy is bubbly.
