Make Ahead Breakfast Casserole

Ingredients

2 1/2 cups seasoned croutons
1 pound spicy pork sausage
4 eggs
2 1/4 cups milk
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10 ounce) package frozen chopped spinach – thawed, drained and squeezed dry
1 (4.5 ounce) can mushrooms, drained and chopped
1 cup shredded sharp Cheddar cheese
1 cup shredded Monterey Jack cheese
1/4 teaspoon dry mustard
2 sprigs fresh parsley, for garnish

Directions

Spread croutons on bottom of greased 9×13 inch baking dish. Crumble sausage into medium skillet. Cook over medium heat until browned, stirring occasionally. Drain off any drippings. Spread sausage over croutons.

In a large bowl, whisk together eggs and milk until well blended. Stir in soup, spinach, mushrooms, cheeses and mustard. Pour egg mixture over sausage and croutons. Refrigerate overnight.

The next morning, preheat oven to 325 degrees F (165 degrees C).

Bake in preheated oven for 50 to 55 minutes or until set and lightly browned on top. Garnish with parsley sprigs and serve hot.

How To Make Breakfast Sausage White Cheese Pizza

Ingredients

12 ounces ground Italian sausage
1 tablespoon butter
1 cup chopped onion
1 (12 inch) prepared pizza crust
1 1/4 cups pizza sauce
12 ounces shredded mozzarella cheese
8 ounces pork sausage links, sliced
12 ounces shredded Monterey Jack cheese

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.

Over medium-low heat melt butter in a large saucepan. Add onions. Cook slowly, stirring occasionally, until onions are soft.

Place crust on pizza pan. Spread pizza sauce over crust and add Italian sausage. Cover with mozzarella cheese and place sliced links over cheese. Spread Monterey Jack cheese on top of links..

Bake in preheated oven for 20 to 25 minutes, until golden.

Ingredients

    Crust
  • 4 cups all-purpose flour
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 2 teaspoons salt
  • 1 3/4 cups shortening
  • 1/2 cup cold water
  • 1 egg
  • 1 tablespoon vinegar
  • Filling
  • 8 slices bacon
  • 1 tablespoon butter
  • 1/2 cup chopped onion
  • 1/3 cup finely diced smoked ham
  • 3 cups heavy cream
  • 8 eggs, beaten
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon nutmeg
  • 3 tablespoons finely chopped fresh basil
  • 1 tablespoon fresh thyme, minced
  • 1 (3 ounce) package cream cheese, diced
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 bunch green onions, chopped
  • 1/3 cup sliced almonds

Instructions

  1. Mix together flour, sugar, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Add water, egg, and vinegar. Mix together but do not work too much. Divide pastry into two pieces, cover and chill for 30 minutes.
  2. Preheat oven to 350 degrees F (175 degrees C). Form each piece into a round and roll out crust on lightly floured surface. Carefully fit into two 10 inch tart pans.
  3. Blind bake tart shells in preheated oven until golden brown. Let cool.
  4. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside.
  5. Saute onion in butter until translucent. Divide ham, bacon and onion into two equal portions and sprinkle over the bottom of tart shells.
  6. Whisk together cream and beaten eggs. Add salt, pepper, nutmeg, basil, and thyme, and stir well. Pour egg mixture over bacon mixture. Sprinkle cream cheese cubes and grated Cheddar and Monterey Jack cheeses over the top of each filled tart. Sprinkle green onions over cheese, followed by sliced almonds.
  7. Bake in preheated 350 degrees F (175 degrees C) oven for 30 to 40 minutes. Let cool slightly, then cut and serve.

  • 1 pound Bob Evans Maple Sausage Roll
  • 1/2 cup diced red or green pepper

  4. On each tortilla, spread a thin layer of cheese mixture. Top with sausage and peppers mixture. Roll up and serve with salsa.

  • 1 cup chopped zucchini
  • 1/2 cup chopped green pepper

Instructions

  1. In a large skillet, saute mushrooms, zucchini, green pepper and onions in butter for 5 minutes or until tender. Drain off juices. Stir in tomato.
  2. In a bowl, beat the eggs, water, mustard, salt and pepper. Pour over vegetables.
  3. Cover and cook over medium heat for 5-10 minutes or until eggs are set. Sprinkle with cheese and paprika. Cut into wedges to serve.
