Got Milk? for Breakfast! It’s National Dairy Month

June is National Dairy Month so we are encouraging you to consume your dairy at breakfast time.

I’m sure you know that all foods in the Dairy group contain calcium which is needed for building and maintaining strong bones and teeth. But did you know, that calcium is also important for regulating blood pressure and for the nervous system?

The Dairy Group includes milk, yogurt, cheese, and fortified soymilk. They provide calcium, vitamin D, potassium, protein, and other nutrients needed for good health throughout life. Choices should be low-fat or fat-free—to cut calories and saturated fat.

How much dairy is needed?

  • Older children, teens, and adults need 3 cups a day
  • Children 4 to 8 years old need 2½ cups a day
  • Children 2 to 3 years old need 2 cups a day

What counts as a cup of dairy?milk, cheese, yogurt national dairy month

  • 1 cup of milk, yogurt, or soy beverage
  • 1½ ounces of natural cheese
  • 2 ounces of processed cheese

Ingredients
1 cup low-fat strawberry yogurt
6 large strawberries

Directions

Chop your strawberries into small bits. And mix with the yogurt.

Pour mix into ice cube trays or paper cups.

Freeze for 30 minutes and add popsicle sticks to each pop.

Breakfast is ready to go all summer.

June Dairy Month started out as a way to distribute extra milk during the warm months of summer. The commemoration was established in 1937 by grocer organizations sponsoring “National Milk Month.” By 1939, June became the official “dairy month.”  via the Dairy Alliance

Ingredients

  • 3/4 cup chilled orange juice
  • 1/3 cup chilled pineapple juice
  • 2 cups vanilla yogurt
  • 1 cup frozen blueberries
  • 1/2 cup frozen sliced strawberries
  • 1/2 banana, sliced

Instructions

  1. Place the orange juice, pineapple juice, yogurt, blueberries, strawberries, and bananas into a blender. Cover and blend until smooth. The berry drink will be very thick. Serve immediately.

Ingredients

  • 1 cup soy milk
  • 1/2 cup rolled oats
  • 1 banana, broken into chunks
  • 14 frozen strawberries
  • 1/2 teaspoon vanilla extract
  • 1 1/2 teaspoons white sugar

Instructions

  1. In a blender, combine soy milk, oats, banana and strawberries. Add vanilla and sugar if desired. Blend until smooth. Pour into glasses and serve.

Toasted Strawberry-Cream Cheese Breakfast Sandwiches

Ingredients

  • 2 1/2 cups fresh strawberries, cleaned, hulled and sliced
  • 3/4 cup pink sparkling wine
  • 1 (8 ounce) package cream cheese, softened
  • 3/4 cup finely chopped white chocolate
  • 2 teaspoons finely grated orange zest
  • 2 tablespoons fresh orange juice
  • 8 slices cinnamon raisin bread
  • 2 tablespoons butter
  • 1/2 cup maple syrup

Instructions

  1. Place the strawberries in a bowl with the sparkling wine and let marinate at least 20 minutes. Drain the strawberries, reserving the sparkling wine. Set aside 1/2 cup of strawberries for a garnish.
  2. Meanwhile, combine the cream cheese, white chocolate, orange zest, and orange juice in a separate bowl; stir and blend until smooth.
  3. Spread 4 slices of raisin bread with the cream cheese mixture. Arrange the drained strawberries over the cream cheese. Top with remaining 4 slices of raisin bread to make a sandwich.
  4. Melt the butter in a large skillet over medium heat. Place the sandwiches in the skillet; cook until lightly toasted on each side, about 2 minutes per side.
  5. Place the toasted sandwiches on serving plates, and cut in half. Drizzle evenly with maple syrup, and garnish with remaining strawberries. Serve with the reserved sparkling wine.

Leslie’s Strawberry Breakfast Chops

Ingredients

  • 1/4 cup strawberry preserves
  • 1 1/2 tablespoons minced garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon prepared horseradish
  • 2 pork chops
  • 1 tablespoon butter
  • 1 pinch cayenne pepper
  • 4 fresh strawberries for garnish

Instructions

  1. In a small saucepan, combine the strawberry preserves, minced garlic, soy sauce and horseradish. Cook over low heat, stirring frequently until heated through.
  2. Melt butter in a medium skillet. Lightly sprinkle both sides of each pork chop with cayenne pepper. Fry the chops until browned on each side, then continue to cook over medium heat until no longer pink, and the juices run clear.
  3. Serve chops with sauce poured over, and garnish with fresh strawberries.
