How To Make Breakfast Meatloaf

Ingredients

2 pounds ground turkey
2 cups textured vegetable protein
2 cups powdered milk
6 eggs, beaten
2 green bell peppers, chopped
1 small onion, chopped
4 stalks celery, chopped
1 (10 ounce) package frozen spinach, thawed and drained
1 teaspoon ground black pepper
1 teaspoon ground sage

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8×11 inch baking dish.

In a large bowl, mix together the ground turkey, tvp, powdered milk, and eggs until well blended. Mix in the green peppers, onion, celery and spinach. Season with black pepper and sage. Press the mixture into the prepared pan.

Bake for 1 hour in the preheated oven, or until the center is firm and the juices run clear. Let stand for a few minutes before slicing into 16 slices.

Ingredients

1 pound lean ground turkey
3/4 teaspoon salt
1/2 teaspoon rubbed sage
1/2 teaspoon pepper
1/4 teaspoon ground ginger

Directions

Crumble turkey into a large bowl. Add the salt, sage, pepper and ginger. Shape into eight 2-in. patties. In a nonstick skillet coated with nonstick cooking spray, cook patties over medium heat for 6-8 minutes on each side or until no longer pink and a meat thermometer reads 165 degrees F.

How To Make Sausage Breakfast Wraps

Ingredients

1 pound turkey Italian sausage links, casings removed
1 medium sweet red pepper, diced
1 small onion, diced
4 (8 ounce) cartons frozen egg substitute, thawed
1 (4 ounce) can chopped green chilies
1 teaspoon chili powder
10 (8 inch) flour tortillas, warmed
1 1/4 cups salsa

Directions

In a nonstick skillet, cook sausage over medium heat until no longer pink; drain. Transfer to a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray. Sprinkle with red pepper and onion. Combine the egg substitute, green chilies and chili powder; pour over sausage mixture.

Bake, uncovered, at 350 degrees F for 30-35 minutes or until set. Break up sausage mixture with a spoon. Place 2/3 cup down the center of each tortilla; top with salsa. Fold one end over sausage mixture, then fold two sides over.

4 green onions, finely chopped
1 (16 ounce) package frozen hash brown potatoes
1/2 cup milk
1 1/2 cups shredded Cheddar cheese

Directions

Place turkey sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, stir together eggs, green onions, hash browns, milk, cheddar cheese and cooked sausage. Pour mixture into a 9×13 inch baking pan.

Recipe For Egg Pesto Breakfast Wrap

Ingredients

  • 2 eggs
  • 1 1/2 teaspoons reduced-fat sour cream
  • 1/4 cup shredded reduced-fat Cheddar cheese
  • 2 tablespoons finely chopped onion
  • 1 1/2 teaspoons prepared pesto sauce
  • 3 grape tomatoes, sliced
  • 1 slice turkey bacon
  • 1/2 ounce marinated artichoke hearts, drained and thinly sliced
  • 1 10-inch flour tortilla
  • salt and pepper to taste

Instructions

  1. Beat the eggs in a bowl with the sour cream until blended, and stir in the Cheddar cheese.
  2. Spray a skillet with cooking spray, and cook and stir the onion and pesto sauce over medium heat until the onion is translucent, about 6 minutes. Stir in the tomatoes, and pour the egg mixture into the skillet. Cook and stir the egg mixture until the eggs are cooked but not dry, about 3 minutes. Remove eggs from the skillet, and set aside.
  3. Place the turkey bacon into the skillet, and fry, flipping once, until the bacon is thoroughly cooked and starting to crisp, about 3 minutes per side. When the bacon is cooked, place the artichokes into the skillet to heat for about 1 minute, and remove the bacon and artichokes from the pan.
  4. Spray the skillet with cooking spray, and place the tortilla into the hot skillet. Heat the tortilla until warm and flexible, and remove to a plate.
  5. Spoon the eggs, turkey bacon, and artichokes into the center of the tortilla, and season with salt and pepper. Fold the bottom 2 inches of the tortilla up to enclose the filling, and wrap tightly.
